It is recommended that students have attained an NVQ Level 1 in Food Preparation, however, if you have some relevant practical experience you could be admitted directly on to the course without this qualification. All applicants will be interviewed.
As well as an interview at the college, we will request a school or college report.
The aim of this course is to equip you with an industry recognised qualification that will teach you all the fundamentals of food preparation and cooking for the hospitality industry.
You will attend tutor-led lectures, practical sessions and tutorials while building a portfolio of evidence.

YOU MUST COMPLETE 11 UNITS FROM:
> Prepare fish for basic dishes
> Cook and finish basic fish dishes
> Prepare meat for basic dishes
> Cook and finish basic meat dishes
> Prepare poultry for basic dishes
> Cook and finish basic poultry dishes
> Prepare basic vegetable dishes
> Cook and finish basic vegetable dishes
> Prepare, cook and finish soups
> Prepare, cook and finish sauces
> Prepare, cook and finish basic stocks
> Prepare, cook and finish basic rice dishes
> Prepare, cook and finish basic pastry dishes
> Prepare, cook and finish basic dough products
Course Assessment Method
Practical assessments will take place in the college kitchens. If you are in employment, evidence of competence may be accepted from your place of work if there is a qualified assessor on sight.
Underpinning knowledge is delivered in the theory lesson and is tested by a series of question papers.
> Progression to NVQ Level 3 Professional Cookery either Kitchen and Larder or Patisserie and Confectionery.
> There are many careers routes that require this qualification ranging from working in hotels, restaurants, schools, hospitals, care homes and cruise ships.
