Employers will set their own entry requirements in order to start on this apprenticeship.
Commis Chef is the most common starting position in many kitchens and is, in principle, the most junior culinary role. A Commis Chef prepares food and carries out basic cooking tasks under the supervision of a senior chef. The primary objective of the Commis Chef is to learn and understand how to carry out the basic functions in every section of the kitchen. By doing this, they have the opportunity to experience, consider and value each section with a view to choosing an area where they feel most inspired.
The learning programme is based on gaining the knowledge and demonstrating the skills needed to work across all aspects of a professional kitchen, from practical cookery to understanding the business and people skills.
The main emphasis will be on culinary skills and the preparation and cooking of a wide range of commodities including fish, shellfish, meat, poultry, game, offal, vegetables, stocks, sauces, soups, egg dishes, bread and dough, pastry, cakes and hot and cold desserts.
Course Assessment Method
A variety of end point assessment methods will be employed to include: multiple choice tests comprising of scenario based questions, practical observations, culinary challenge observations and professional discussions.
You may progress from this apprenticeship and commence employment as a chef de partie or senior production chef.
